Inspiration: chablis

You may have heard the term in the world of wine: "ABC (Anything But Chardonnay)." What most people know of Chardonnay is a fat, buttery, vanilla, lees, and oak bomb—a very popular style worldwide, so much so that it became over-saturated in the 1990s and early 2000s.

However, none of those notes are from the grape itself. These notes are what we call Secondary Aromas, which were created via various winemaking choices: malolactic conversion, lees stirring, and toasted oak barrels. The "ABC" movement was a direct backlash against that style, which masked the fruit—not against the fruit itself, because Chardonnay is so much more.

It is a very versatile and malleable grape, able to express everything from weather, terroir, and winemaking decisions. One of the most well-known wines made from Chardonnay is Champagne. Relatively close by is another wonderful, world-class region that is all about the Chardonnay fruit itself: CHABLIS.

In the track "CHABLIS," I wanted to highlight the electrifying acidity using virtuoso flute, and the unique characteristics of the soil, Kimmeridgian, which consists of a mix of limestone, clay, and marine fossils dated back to the Upper Jurassic period (150 to 157 million years ago). The Chablis region at that time was a vast, shallow, ancient ocean. The wine can be said to be a fantastic manifestation of the ancient and the future.

By combining operatic and orchestral expressions with soaring flute and trance EDM, this track lays out the terroir and emotions of the tasting experience.

Enjoy!
